Sườn rửa sạch, ướp với 1 muỗng canh hạt nêm và 1 muỗng cà phê tiêu khoảng 15 phút cho thấm rồi đổ bột năng vào tô sườn, trộn đều để bột năng áo đều bên ngoài sườn.
Hành lá cắt khúc, ớt và gừng cắt lát mỏng. Loại bỏ hạt ớt.
Làm nóng chảo với 2 muỗng canh dầu ăn, cho sườn vào chiên với lửa vừa. Khi sườn có màu vàng đều đẹp mắt thì bạn lấy ra chén để riêng.
Vẫn trong chảo đã chiên sườn, chắt bớt dầu ăn đi chỉ để lại một ít láng chảo, cho hành lá, gừng và ớt vào đảo nhanh tay. Khi hành gừng mềm thì thêm sườn vào xóc đều, nêm nếm lại vừa ăn rồi tắt bếp.
Múc sườn non chiên ra đĩa, dùng với cơm trắng nhé!
