Ngán biển rửa sạch vỏ bên ngoài, ngâm vào âu nước lọc từ 1 - 2 tiếng, sau đó rửa lại cho thật sạch dưới vòi nước lạnh. Tiếp tục ngâm ngán biển vào âu nước vo gạo và vài lát ớt thái mỏng đến khi ngán biển mở he hé miệng bạn dùng vòi nước lạnh xịt vào trong thịt con ngán để cát theo dòng nước chảy ra ngoài.
Sả tước bỏ bớt cọng cứng, rửa sạch, dùng cán dao đập dập. Ớt quả rửa sạch, cắt lát.
Muối, hạt tiêu, trộn đều vào bát nhỏ, vắt vào vài giọt chanh. Ngán biển sau khi đã rửa thật sạch và làm kỹ thì cho vào nồi với sả, ớt, chút muối, đậy kín nắp nồi, đun khoảng từ 3 - 5 phút cho đến khi ngán mở miệng hoàn toàn thì tắt bếp.
Đổ ngán ra đĩa dùng nóng với muối tiêu chanh cực ngon luôn đấy. Còn chờ gì mà chị em chúng ta không chuẩn bị ngay cho cả nhà cùng ăn nào.
